Easy honeycomb candy bars made at home
- 1/4 cup sugar
- 2 tbsp. honey
- 1 tbsp. water
- 1 tsp. baking soda
- 100g chocolate
Method- In a heavy bottomed, small sauce pan combine the sugar, honey and water.
- Over low heat dissolve the sugar and turn to medium heat and bring the mixture to boil until it reaches a caramel color or it has reached the hard crack temperature of 150C/300F.
- Remove from heat and gently stir to help the bubbles settle down.
- Now add the baking soda, keep stirring as this little experiment unfolds and then pour the contents onto wax paper or parchment paper.
- Let cool and then crack into pieces.
- Melt the chocolate in a water bath, then drop honeycomb pieces into it to coat, remove with 2 forks and let the access drip of. Place on paper until dry.

No egg Muffins
INGREDIENTS
Batter:
2 apples, peeled, in small pieces
1 cup grated carrot (1-2 carrots)
1 ripe banana, mashed (the browner the better)
1/4 cups vegetable oil
1/4 cups low fat milk , soy milk or almond milk
1/4 cups sugar
2 t. pure vanilla extract
1 1/4 cups flour
1/2 t. baking powder

Topping:
3 T. sugar
2 t. ground cinnamon
3 T. sugar
2 t. ground cinnamon
DIRECTIONS
Preheat oven to 350 degrees. Grease a standard size 12 muffin tin or line with paper cups; set aside.
To make the batter, place the apple, grated carrot and mashed banana in a bowl and stir to combine.
Measure in the remaining batter ingredients and mix well. Spoon evenly into the muffin cups. In a small bowl, combine the sugar and cinnamon for the topping, then sprinkle evenly over top of the muffins.
Place tin in oven and bake 20-25 minutes. Remove from oven and let it cool complete ! very important !

Biscotti
These biscotti are made with pistache nuts and some cramberries
These are delicious and they stay good for many days
What you need ,
1 ½ cup unsalted butter
¾ cup granulated sugar
¾ cup light brown sugar
2 eggs, lightly beaten
¼ cup anisette liqueur
3 ½ cups all-purpose flour
½ tsp baking powder
½ tsp baking soda
½ cup sliced almonds. or pistache , pinenuts
Preheat oven to 180°. Lightly grease baking pan with butter. Cream together the butter and sugars. Add the eggs and anisette. Sift together the flour, baking powder, and baking soda into a separate, large bowl. Mix together the butter and flour mixtures until well mixed and a dough forms. Fold in the almonds. Divide the dough into 2 equal parts and form each into an oval-shaped mound about 5 cm high. Place the dough mounds on a baking sheet. Bake for 20 minutes. take them from the oven and Slice the mounds lengthwise into small slices Return to the oven and bake for 5 minutes. Remove from the oven and let cool slightly.
