Chicken and veggies
- 600 gms sliced chicken breasts
- 1 tbsp. cooking oil
- 1 tbsp. red curry paste
- 400 ml coconut milk
- 100 ml water
- 1 tbsp. palm sugar or other
- 1 tbsp. fish sauce
- 120 gms broccoli, cauliflower the veggies ,( I like to put green beans.)
- 20 gms kaffir lime leaves
- 40 gms sliced big red chilli
- 100 gms sweet basil
- In a sauce pan, heat oil, add red curry paste and cook for two minutes until aroma.
- Add the coconut milk, palm sugar, fish sauce and allow it to simmer. Add chicken.
- Add veggies of you choice ,Cook for around five minutes.
- Add the kaffir lime leaves, sliced red chilli and sweet basil.
- Remove it from flame and serve it hot with jasmine rice.
- Decorate with some lime slices , you can also add some caju nuts .
