Orange cake




5 eggs
1 cup of sugar
Rasp of 2 oranges
3/4 orange juice
2 cups flour
1 teaspoon baking powder




Grease a form with a hole and preheat the oven to 180ºC.
In a bowl put the eggs, the sugar and the rasp and beat very well with the mixer (about 5 minutes) until obtaining a voluminous and whitish preparation.

Add the orange juice and stir until incorporated.

Finally add the flour with the baking sifted and wrap gently in the dough, until homogeneous.

Put the dough in the form and take it to the oven until it cooks about 35 minutes

1 chávena de açúcar
raspa de 2 laranjas
3/4 sumo de laranja
2 chávenas de farinha
1 colher (chá) de fermento




Untar uma forma com buraco e pré-aquecer o forno a 180ºC.
Numa taça colocar os ovos, o açúcar e a raspa e bater muito bem com a batedeira (uns 5 minutos) até obter um preparado volumoso e esbranquiçado.


Adicionar o sumo de laranja e mexer até incorporar.


Por fim adicionar a farinha com o fermento peneirados e envolver suavemente na massa, até ficar homogénea.


Colocar a massa na forma e levar ao forno até cozer mais ou menos 35 minutos

Fish (samke harre ) lebanese recipe




2 fillets  victoria bars or similar white fish 

1 cup finely diced yellow onion 1 green bell pepper diced 
 1 jalapeno chile, seeds removed and finely diced
 2 whole bunches parsley 
1/4 cup olive oil
 2 lemons
 1/2 cup tahini 
1 cup mixed pine nuts and chopped walnuts 
some salt 
 white pepper 
1. Preheat oven 
Place the fish fillets on a baking sheet lined with foil.
 Rub a bit of olive oil over the fillets and sprinkle liberally with salt and with a pinch of white pepper. 
Bake the fish fillets for about 15 minutes, or until firm and cooked through.
 Set aside the fish but turn the oven up to broil.
 2. Meanwhile, juice the lemons, removing any seeds.
 Slice the cilantro leaves (it's okay to get some of the stems in there) into a big pile.
 Place the tahini in a bowl with one tablespoon lemon juice and two pinches of salt and stir together
. Add enough water (1-3 tablespoons) to the tahini to make it a thick pourable consistency.
 3. Heat the 1/4 cup olive oil in a saute pan. Add the onions, bell pepper, and jalapeno and cook gently until the onions are translucent and everything is soft. Remove from the heat. 
4. Add the remaining lemon juice to the onion mixture, then gently fold in the cilantro. Gently break up the fish fillets into large pieces, discarding any skin or bones, then place the fish fillets into the pan with the onion-lemon mixture, and fold everything very gently to coat the fish with the sauce. 

5. Pile the fish mixture onto a serving platter. Pour the tahini over the whole thing. Place the walnuts and pine nuts on a baking and slide under the broiler, watching closely, for only about a minute until well toasted. 

Top the fish mixture with the nuts and serve immediately. 

bolo de alfarroba






Ingredientes

  • 5 ovos
  • 1 laranja
  • 150 g de óleo
  • 300 g de açúcar
  • 80 g de farinha de alfarroba
  • 130 g de farinha de trigo
  • 1 colher de chá de fermento p/ bolos

Modo de Preparação

  1. Coloque os ovos, a laranja com casca (mas eliminando o topo e a base) cortada em 4, o óleo e o açúcar no liquidificador.
  2. Bata durante 1 minuto.
  3. Em seguida, junte as farinhas à mistura do liquidificador.
  4. Coloque a massa numa forma untada com manteiga e polvilhada com farinha e leve ao forno a 180º C durante cerca 40 minutos.
  5. Antes de retirar faça o teste do palito. 



Pesto sauce






Ingredients: (gives to a small bottle of 275 ml)

100 g of almond or pine nuts

1 clove garlic
1 small sauce of basil leaves
1/2 cup grated Parmesan cheese
+/- 85 ml of extra virgin olive oil
Salt and pepper (mixture of 4 peppers) freshly ground q.s.



Preparation:

Toast the almond in a small frying pan and let cool.
In a chopper / food processor, chop the almond and garlic clove (do not over-chop).
Add the remaining ingredients and chop everything.
Grind the seasoning and add more olive oil, if necessary.


folhado de alheira






Ingredientes:

1 cebola roxa
1 dente de alho
2 alheiras (usei duas ,mas uma será suficiente)
folhas de espinafres (um bom punhado)
2 maçãs em cubos
sal fino e mistura de pimentas q.b
1 placa de massa folhada rectangular
1 ovo batido caseiro


Preparação:

Retirar a massa folhada da embalagem e seguir as instruções.
Numa frigideira ao lume colocar um pouco de azeite e deitar a cebola picada.
Adicionar o alho picado.
Deixar cozinhar um pouco.
Entretanto, retirar a pele às alheiras e parti-las em pedaços.
Adicionar à frigideira e misturar tudo, esmagando  a alheira com ajuda de uma colher de pau.
Temperar com pouco sal e com pimenta.
Juntar a maçã e incorporar tudo.
Cortar grosseiramente as folhas de espinafres, um fio de azeite e adicionar ao preparado, mexendo mais um pouco.
Deixar a mistura arrefecer (para não empapar a massa).
Abrir a massa folhada e deitar o preparado ao centro fazendo um rectângulo.
Fechar a massa sobre o recheio, voltar ao contrário e fechar as pontas, dobrando-as para dentro e usar os dentes de um garfo para selar.
Fazer cortes na superfície da massa e pincelar co um ovo batido.
Vai ao forno a 220 ºC por 15 min para ficar bem dourado e de seguida, reduzir a temperatura para os 180 ºC, deixando ficar mais 15-20 min.


Ingredients:

1 purple onion
1 clove garlic
2 alheiras (I used two, but one is also good )
Leaves of spinach (a good handful)
2 diced apples
Fine salt and pepper mixture 
1 plate of rectangular puff pastry
1 homemade beaten egg


Preparation:

Remove the puff pastry from the package and follow the instructions.
In a frying pan on the heat add a little oil and pour the chopped onion.
Add chopped garlic.
Let it cook a little.
However, remove the skin from the leaves and tear them apart.
Add to the skillet and mix everything, crushing the alheira with the help of a wooden spoon.
Season with little salt and pepper.
Add the apple and incorporate everything.
Cut roughly the leaves of spinach, a strand of olive oil and add to the preparation, stirring a little more.
Allow the mixture to cool (do not soak the dough).
Open the puff pastry and pour the preparation to the center making a rectangle.
Close the dough over the filling, turn it over and close the ends, folding them in and using the teeth of a fork to seal.
Make cuts on the surface of the dough and brush with a beaten egg.
It goes to the oven at 220 ºC for 15 min to be well gilded and then to reduce the temperature to 180 ºC, leaving to stay another 15-20 min.

Chicken and veggies





Ingredients Needed
  • 600 gms sliced chicken breasts
  • 1 tbsp. cooking oil
  • 1 tbsp. red curry paste
  • 400 ml coconut milk
  • 100 ml water 
  • 1 tbsp. palm sugar or other 
  • 1 tbsp. fish sauce
  • 120 gms broccoli, cauliflower the veggies ,( I like to put green beans.)
  • 20 gms kaffir lime leaves
  • 40 gms sliced big red chilli
  • 100 gms sweet basil
  1. In a sauce pan, heat oil, add red curry paste and cook for two minutes until aroma.
  2. Add the coconut milk, palm sugar, fish sauce and allow it to simmer. Add chicken.
  3. Add veggies of you choice  ,Cook for around five minutes.
  4. Add the kaffir lime leaves, sliced red chilli and sweet basil.
  5. Remove it from flame and serve it hot with jasmine rice.
  6. Decorate with some lime slices , you can also add some caju nuts .

Easy apple cake

This is a delicious and very easy recipe for the best apple cake , just try it !










What you need,


1 cup + 1/4 cup

1 cup sugar 
130 gr butter
2 eggs
3 apples
1 tsp bp

how to make ,


Mix manually or with a mixer , the butter and sugar until creamy, add the eggs , finaly add the flour and bp mix all very well , put on a cake form arrange the very fine sliced apples on top pressing a bit , and put the rest of the sugar on top , so it will make it crispy, you can also add some cinnamon, put on a preheated oven about 180 degrees

for about 50 minutes, is delicious  served with some cream anglaise.  Enjoy it!

pineapple cake

What you need 


200g butter
250g of sugar
6 eggs
225g of flour
1 tablespoon baking powder
4 tablespoons pineapple syrup
1 can of pineapple in syrup
Sugar q.s. (For caramel) or in bottle

Note: if you make fresh pineapples reserve the juice of it.



Start by turning on the oven at 180º. Drain the pineapple and reserve the syrup.
Beat the egg whites and set aside. Beat the butter with the sugar until you get a cream. Add the egg yolks and mix well. Sift the flour and add the baking powder. Wrap this mixture in the dough, alternating with the beaten egg whites and the syrup of the pineapple that has reserved.Prepare the caramel by boiling about 250g of sugar (the amount is variable) until caramelized.
Finally, sweep the shape with the caramel and line it with the pineapple slices.
Pour batter into baking pan and bake, preheated, for 50 minutes. Enjoy it !

Italian merengue

 

100 grams sugar

40 ml water
 put in the fire cook until it reaches 118 degress on the thermometer

Beat 3 egg whites until stiff , pour the sugar sirop , slowly and beat more 5 minutes


 to use for deserts !

balsamic dressing

    • 3 tablespoons balsamic vinegar
    • 1 tablespoon Dijon mustard
    • 1 garlic clove, minced
    • 1/2 cup olive oil
    • Salt and freshly ground pepper




PREPARATION

    1. In a small bowl, combine the vinegar, mustard, and garlic. Add the oil in a slow steady stream, whisking constantly. Season with salt and pepper to taste.

Orange cupcakes with no frosting


What you need 




4 eggs

half orange with skin
200 gr sugar
200 gr flour 
200 gr oil ( sunflour )
1 teaspoon baking powder
a pinch of salt

How to make


Warm oven at 250 ° 


Put the orange in the thermomix and mix for a few seconds on speed 5

add the 4 eggs and sugar do 3 minutes temp 37 on speed 5 after 3 minutes do the same but without the temperature, add the oil and mix 15 sec speed 5 add flour and baking powder mix 10 seconds speed 6 , put in the cupcake forms put a bit of sugar on top of each

when the oven is hot ( 250°) put the cakes in side and drop the temperature to 200° bake them about 20 minutes .

My minestrone soup





Ingredients
  • 4 cups  vegetable stock
  • 2 cups water
  • 2 fresh  diced tomatoes
  • 1 cup diced celery 
  • 1 cup diced carrots
  • 1 cup diced  onion (1 small)
  • 2 Tbsp chopped fresh parsley (or 2 tsp dried)
  • 2 tsp dried basil
  • 1 tsp dried oregano

  • 1/2 tsp dried thyme

  • 1/2 tsp sugar
  • Salt and black pepper, to taste
  • 1  cup diced courgete
  • 1 1/3 cups shell pasta ( or other pasta)
  • 2 cloves garlic, minced
  • 1)can brown  kidney beans, drained and rinsed
  • 2 cup fresh spinach

  • to serve pecorino cheese and fresh basil 

How to make !


  1. Heat three tablespoons of olive oil over medium heat in a large soup pot.
  2. Saute onion, celery, garlic,  and courgete in the oil for 5 minutes or until onions begin to turn translucent.
  3. Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and spices.
  4. Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
  5. Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.
Serve with some fresh basil and cheese

Biscoitos de alfarroba






Biscotti de Alfarroba, Amêndoa e Figos


100 gr farinha trigo integral
50 gr farinha espelta
50 gr farinha alfarroba
1 colher (chá) fermento
70 gr açúcar mascavado claro
2 ovos batidos
raspa de 1 laranja
100 gr de amêndoas e figos secos
(1 colher de sopa de água)


Preparação

Untar e forrar com papel vegetal um tabuleiro. Reservar. Pré-aquecer o forno a 180ºC.
Numa taça misturar as farinhas com o fermento. Adicionar o açúcar, a raspa e os frutos secos em pedaços.
Acrescentar os ovos e misturar muito bem. Se achar a massa demasiado seca e difícil de juntar acrescentar a colher de água.
Moldar um tronco achatado com  2-3 cm de altura, colocar no tabuleiro e levar ao forno a cozer durante uns 25 minutos, mas sem tostar demasiado. Retirar do forno, deixar arrefecer ligeiramente e cortar o tronco em fatias com 1-2 cm.
Dispor as fatias no tabuleiro, e levar ao forno mais uns 10 minutos, virando de ambos os lados para tostar.

Brussel waffels




Ingredients

500 g flour
25 g of fresh yeast
Butter 200 g
1/2 liter milk
1/2 liter of sparkling water
4 eggs
1 packet of vanilla sugar
5 g of salt

How to make

Sift the flour into a bowl and sprinkle with sugar. Heat the water until it is lukewarm and dissolve the yeast in it. Heat the milk with mixing, add it to the flour, then the water. Put the butter over very low heat so they can melt slowly without browning, alternatively you can place it for a short time at the lowest position in the microwave. Separate the eggs and add the yolks to the mixture and the melted butter. Beat the egg and add. Mix well and add finally the salt and mix for a while.
Leave the dough in a warm but still free place to rise for about half an hour, the dough will nearly double in volume.

Baking the waffles

 Is not necessary to grease your waffle iron. Pour the batter evenly in the iron, close it and turn right around. Let it bake the allotted time (usually around 4 minutes) and remove the waffles

Chocolate chip cokkies





Delicious !





Ingredients:
  • 1/2 cup (100 grams) granulated sugar
  • 1/2 cup (120 grams) firmly packed light brown sugar
  • 8 tablespoons (115 grams) unsalted butter, cold, cut into  (1cm) pieces
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups (200 grams) all-purpose flour
  • 1 1/2 cups (200 grams) semisweet chocolate chips
  • 1 cup (130 grams) chopped walnuts or pecans
1. PREHEAT oven to(150°C).
2. BEAT the butter, sugar andbrown sugar together in a mixing bowl until creamy.
3. ADD in the egg and vanilla. Beat slowly.
4. STIR together the baking soda, salt, and flour, then mix them in to the batter.
5. MIX in the chocolate and nuts.
6. FORM balls of cookie dough and place on cookie sheets lined with parchment paper. The balls sould be about  (4 cm) in diameter and will spread considerably during baking, so be sure to space them at least  (8 cm) apart.
7. BAKE for about 18 minutes, or until pale golden brown. Remove from the oven and let cool slightly.Makes about 20 cookies.
